This recipe is an excellent source of manganese, selenium, vitamin C, and fiber and a good source of vitamin K, vitamin A, magnesium, phosphorus, potassium, and protein.
Instructions:
1. Combine tomatoes, olive oil, basil and salt in a covered bowl and let marinate at least 4 hours (Do not refrigerate; tomatoes will lose their flavor).
2. Use a slotted spoon to layer on to bread. Makes 4 cups tomato mixture. Serve immediately.
